To make it, the last Garnachas are used, which are vinified each year, since they are Garnachas from several vineyards located in the highest areas of our vineyards. This altitude makes its ripening slower and its optimal state for harvesting is somewhat later than the rest of the others. On its label we can see a pencil almost finished, which exemplifies that the harvest is almost done, the work done, and that remaining pencil, that last Garnacha with which we closed the campaign.
