Once the man came into contact with the juice of the fermented grape, the need was born to have the right containers to make and contain the wine.<\/p>\n
The materials used in each historical moment were responding to the uses and customs of the time. Traditionally, it was built of clay or wood and, in the course of time, the masonry and cement would also be imposed.<\/p>\n
The need to store wines in large quantities led to the creation of adequate deposits. The jars were the first considerable containers of size that were standardized to store the wines.<\/p>\n
After the mud, first covered with waterproof substances and innocuous paint and varnish, came the wooden jars that had a characteristic frustoconical shape. In them, the wine content other than ferment, could undergo aging since the lack of total hermetism allowed a series of air transfers that affected the evolution of wine.<\/p>\n
Successively experimented with tanks of lime and song, whose greater thickness slowed down the process of cooling the wine, and with concrete and brick, in which case it was necessary to ensure very well the hermeticism. With the incorporation of cement as a building element, the vats were converted into an ideal container, totally hermetic for the fermentation of the wines and their storage. It was not the definitive solution because this material, susceptible to being attacked by certain acids in wine, required special care and regular cleaning.<\/p>\n
The alternative of stainless steel tanks introduced in the mid-twentieth century, has been a fundamental step in the modernization and optimization of the cellars.
\nIt remains unchanged to the corrosive agents of the winemaking process, does not transmit any type of aroma or flavor, its polished texture does not give place to cracks or fissures and its cleaning is easy<\/p>\n
