After making the Vitis vinifera growing a tradition, the production of musts became popular. Musts then were carefully aged for some time and converted in precious wine. Middle East civilizations first made wine consumption popular, and then Europe and America follow that culture. The extraction techniques have been improving along the centuries, and two of them have reached the present day as the most widely used: the carbonic maceration, perfect for young wines, and the alcohol fermentation, which comprises two additional processes, known as destemming and crushing.
At Paniza we are pleased to keep up not only the traditional methods for juice extraction, but to add several innovations in order to get a first class quality product. As winemakers we focus on applying the best process to every grape vine, to maintain its organoleptic characteristics. This way we get the best varietal and its quality is assured from the first stages of production up to the bottling.

The vineyard’s purest must turned into tradition
We stock a large variety of red wines from five different vines, each one with its own characteristics. They are the result of processing whole red grapes, since the typical color is given by the grape skins. According to the method, the final product can show slight variations in scent and taste, for instance fruit notes, harshness, woody taste, and in some cases, astringency. Many of those characteristics are due to the amount of tannins in the grape skin.
Five different grape varieties are usually harvested in our vineyards that give Paniza wines their distinctive taste. Depending upon the process, the finished wine can be stronger or lighter, which can result in a texture that could range from soft and fresh to a much denser and darker. With this in mind we have developed our product lines: Paniza Joven, Paniza Jabalí, Autor Paniza, Ibero and Fábula.
The different vines we use are all well adapted to the clayey soil of the Spanish land, which yields top quality fruits perfectly fit to the whole winemaking process.
A distinctive red wine for every special occasion
Depending on the chosen variety there are some organoleptic traces that can show up, and may give a different in-mouth taste and aroma, according to the blend. The following are some of our grape varietals, along with its characteristics and how to combine them.
Cabernet- Sauvignon
One of the most resilient vines. Native from the Bordeaux region in France, where it’s usually blended with two other varietals, like Cabernet Franc and Merlot. According to its degree of maturity, it may taste somewhat spicy and give some hints of astringency, resembling pepper, or much softer and sweeter, like fruit jam. It’s the perfect companion to red meats.
Cariñena
Originally from Aragón, this wine has a good acidity and a bitter aftertaste, partly due to its higher amount of tannins. It’s a fruity blending with some characteristic Mediterranean hints. It can be enjoyed alone or combined with light meals, like the tapas.
Garnacha
Believed to be native from the Liguria region, in Italy. Although it’s frequently used in different types of champagne, it also gives pretty bodied red wines with higher alcohol levels and low in tannins. It’s perfect as an appetizer before dinner.
Tempranillo
A perfect grape for making young wines that reinforces their taste after some time aging in barrels. It gives a rubi color, with some tobacco and vanilla notes. It’s slightly astringent, and becomes ideal for accompanying medium fatty cheeses with pepper hints.
Syrah
Presumably of persian origin, this grape variety gives a soft fruity taste, with a deep violet color. In-mouth flavor resembles of red beans. Perfect for marriage with game meats, like hare, duck or partridge.

An elixir straight from the grape to the cup of eternal youth
Besides its delicious taste and aroma, the red wine is an effective partner against aging, since its high levels of flavonoids provide a better response to cell oxidation and help keeping good cardiac health. Just one glass of red wine a day could prevent a heart attack, and even help achieving a complete recovery after a myocardial infarct or arrhythmia.
It also aids digestion, that’s the reason why it comes perfect as the companion to saucy dishes, strong or highly macerated meats.
